Shelf life is in most cases determined by a combination of<br \/>\nraw material quality, product formulation, processing, packaging,<br \/>\nand storage conditions. Storage conditions plays an important role<br \/>\nas temperature and oxygen content may fasten or delay chemical<br \/>\nreactions as well as microbial growth. The storage temperature also<br \/>\ndirectly affects enzymes. Enzyme activity in food may result in a<br \/>\nchange of the chemical composition of the product, resulting in<br \/>\nchanges in flavor, odor, color, and texture. The amount of oxygen<br \/>\nmay gather chemical reactions and thus cause oxidation. Thermal<br \/>\ntreatments are the most used methods to extend the shelf life of<br \/>\nliquid foods by inactivation of microorganisms and enzymes, but<br \/>\nthermal packaging does not work for every product. Gas flushing<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p>One of the most popular active modified atmosphere packaging<br \/>\ntechnologies for food and beverage products, gas flushing of<br \/>\npackages is very common. Gas flush accomplishes three things:<\/p>\n<ul class=\"p-0\">\n<li style=\"list-style-type: none;\">\n<ul class=\"p-0\">\n<li>2. Displacement of oxygen to delay oxidation<\/li>\n<li>3. Decreasing the growth of aerobic spoilage organisms<\/li>\n<li>4. Acting as a filler to maintain package conformity<\/li>\n<li>5. During a gas flush process, a harmless gas, usually nitrogen is<br \/>\nactively pumped into the packaging before sealing to displace<br \/>\nambient oxygen. This is done to decrease the amount of oxygen<br \/>\ninside the package, which will in turn decrease the rate of<br \/>\nspoilage, as oxygen is one of the top killers of freshness.<\/li>\n<li class=\"mt-4\">2. Barrier packaging material<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p>Choosing specific packaging films that provide increased<br \/>\nprotection is an example of passive modified atmosphere packaging.<br \/>\nThis is accomplished by using barrier packaging materials that<br \/>\nprovide decreased permeability to moisture and oxygen, such as<br \/>\nlow-density polyethylene (LDPE), High-density polyethylene (HDPE)<br \/>\nor polypropylene (PP). Oxidation prone products like sauces, also<br \/>\nuse multi-layer (up-to six layers) packaging. The central layer in<br \/>\nthese multi-layer materials are mostly of EVOH. EVOH is a<br \/>\nflexible, crystal clear, and glossy thermoplastic copolymer that<br \/>\nhas some of the best barrier properties to gases such as oxygen,<br \/>\nnitrogen, and carbon dioxide making it especially well-suited for<br \/>\npackaging of food, drugs, cosmetics, and other perishable or<br \/>\ndelicate products to extend shelf life.<\/p>\n<ul class=\"p-0\">\n<li style=\"list-style-type: none;\">\n<ul class=\"p-0\">\n<li class=\"mt-4\">3. Scavenger or desiccant packs<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p>Another example of MAP packaging is the addition of an oxygen<br \/>\nscavenger or desiccant pack to your packaging. you have probably<br \/>\nseen these inside pill bottles.These small sachet type packages<br \/>\noften contain a mixture of iron powder and ascorbic acid, and<br \/>\nsometimes activated carbon. These ingredients act as catalysts or<br \/>\nactivators, absorbing ambient moisture and oxygen, thereby<br \/>\nremoving it from the interior of the packaging that houses the<br \/>\nperishable product.<\/p>\n<h5 class=\"mt-4\">How does modified atmosphere packaging protect food?<\/h5>\n<p>Largely, modified atmosphere packaging technologies protect fresh<br \/>\nfood by decreasing its exposure to oxygen. Oxygen leads to<br \/>\noxidation, which can cause discoloration, spoilage, and off-flavors<br \/>\nand textures. By decreasing or controlling the amount of oxygen<br \/>\npresent in a package, the food product remains fresher longer, gets<br \/>\nan extended shelf life that ensures it remains attractive to<br \/>\nconsumers.<\/p>\n<p>Modified Atmosphere Packaging became especially important during the<br \/>\nCOVID-19 outbreak of 2020. Consumers were instructed to social<br \/>\ndistance themselves and stay at homes as much as possible, so many<br \/>\nbegan stocking up on food products with longer shelf lives. As a<br \/>\nresult, food producers and packagers saw enormous increases in<br \/>\ndemand for packaged food products that used MAP packaging<br \/>\ntechnologies.
